Its a cool morning and I havent had enough coffee.
Its early in the morning and the sun is coming up and the dog just stretched made two circles and was back to sleep before her rump hit the floor. Her new puppy is sleeping the only time he is not in constant motion and noise. I wonder how long it will take to finally house break this puppy.
This is a recipe for Potato Leek Soup You all have seen the leeks in the grocery store and wondered who buys those big green onions? Here is a chance to become one of the elite or maybe your just lucky you found this recipe.
Potato Leek Soup
8 cups of white potatoes peeled and cubed
5 cups of chopped leeks (use only the white part)
3 qt's Chicken broth (fresh if possible canned if you must)
1 qt's vegetable broth (canned)
2 cups Cream, half and half or whole milk*.
Salt, pepper and some fresh chives (1/4 cup snipped about 1/4 inch long) for green and a final touch.
In your thick bottomed soup pot add potatoes and leaks and bring to boil, cook until potatoes are tender (I/E stick fork in potatoes and potato is soft). Turn off heat and use your potato masher until all of the big lumps and 1/2 of the small lumps are gone. Allow soup to cool on stove for an hour. Return to heat and add milk* mixed with 1 teaspoon of salt and one and one half teaspoons of black pepper. Stirring bring to "ALMOST" boiling Do Not Boil!!! Serve with fresh chives sprinkled over the top
